Growing up in a big family, you were quick or you were hungry!

It was about 5:30pm and it was dark outside. The streets lined with snowbanks and the car was covered in salt. I was crammed in the back seat with far too many siblings to ensure we were each buckled safely. It didn’t matter, it was Christmas Eve and we were on our way home from the afternoon mass to enjoy dinner as a family. We parked the car in the icy driveway and walked in the house with one thing on our mind – LASAGNA! While we were away the oven was putting the finishing touches on the lasagnas that the family had prepared that morning. Bubbling away, golden brown and delicious, the lasagnas were taken out to rest a while. Our patience would be put to the ultimate test as we would keep our Christmas sweaters on for just a moment longer while we all huddled, shoulder to shoulder, with plastic smiles across our face for the obligatory Palermo Family Christmas photo. It was finally time, Pops would lead us in prayer and it was time to eat.

This is the Christmas story of my childhood. The presents would be different each year, the family would grow, but the lasagnas never changed. Now that we are all older and have our own families, many of us still carry on the tradition.
