LASAGNA – A Palermo family Christmas Eve Tradition

Every Christmas Eve, our family would rush out to afternoon mass, often getting there an hour and a half early to be sure we got a seat. We’d be wearing our Sunday best, Pops with a Nativity tie he got from the kids the previous Christmas and all of us kids would cycle through a set of hand-me-down Christmas sweaters from years past. Excited to get home to change into something more comfortable we’d walk back into the house from the cold, salted, snow bank lined driveway to the smell of freshly baked lasagna. The cheesy, corner pieces bubbling away would speak to me in a language only I could seem to understand. The adults would torture us, making sure we had a family photo in front of the fireplace while all we could think about were our sweatpants and overstuffed plates of Lasagna. There would always be two options, at least. The first, a traditional meat based red sauce lasagna and another with red peppers, sausage, spinach and a cream sauce. Although our family is too big and too spread out to get together on Christmas, most of us have adopted a few new traditions but have kept the Christmas Eve meal the same.
